½ cup Magical Coconut Oil, extra-strength (use refined coconut oil for neutral flavor)
20 ounces salted dry roasted peanuts
1 cup superfine sugar
⅓ cup powdered peanut butter (we use PB2)
Salt, to taste
Honey, to taste
Place the peanuts, salt, powdered peanut butter, and honey in the bowl of a food processor.
Process for 1 minute; then scrape down the sides of the bowl.
Replace the lid, and continue to process while slowly drizzling in the oil. Blend until the peanut butter is smooth and creamy, about 1½ to 2 minutes.
Transfer your Homemade Magical Peanut Butter into a tight-fitting jar until you’re ready to enjoy!
Stored in the refrigerator, your Homemade Magical Peanut Butter will keep for up to two months and never need re-mixing. If you prefer to store it at room temperature for up to one month, oil and solids may separate.
