Jalapeno Cornbread

Ingredients
  • 1 TBSP coconut oil
  • 2 Cups cornmeal
  • 2.5 Cups gf flour
  • 2.5 TBSP baking powder
  • ¼ Cup sugar
  • 1.5 TBSP himalayan salt
  • ¼ tsp cayenne pepper
  • 1 Stick Magical Butter melted
  • 2 ¾ Cups buttermilk
  • 3 Eggs
  • 2 Large jalapeños
  • 1.5 Cups whole kernel corn – drained
How To
  1. Heat oven to 400 degrees.
  2. In large cast iron pan pour oil and place in oven for 10 minutes.
  3. Mix cornmeal, flour, baking powder, sugar, salt, and cayenne in large mixing bowl.
  4. Add butter, milk, and eggs.
  5. Mix.
  6. De-seed jalapeños and chop.
  7. Fold corn and chopped jalapeños into mixture.
  8. Pour ingredients into hot cast iron pan with melted butter.
  9. Bake for 30 minutes.
