1½ cups Almond Flour (Finely Ground)
1 cup Cottage Cheese (Full Fat)
4 Large Eggs
2 Tablespoon MagicalButter, Melted
2 Tablespoon Sweetener of Choice
2 Teaspoon Vanilla Extract
2 Teaspoon Baking Powder
½ Teaspoon Kosher Salt
Preheat a skillet or large pan over medium-low heat.
Place all ingredients in a medium bowl and blend together using a stand or hand mixer.
Grease the preheated skillet with butter.
Measure out ¼ cup of batter and pour it onto the skillet. Spread it gently using the back of a spoon or MB small silicone spatula.
Cook until small bubbles start to form on the surface. Flip and cook the other side for until your pancake turns golden brown.
Repeat until the batter is gone.
Serve with toppings of your choice.
Makes 12, 6 inch pancakes!
You can use any sweetener such as infused sugar for additional potency, Swerve
sugar for low glycemic. Should you want to use monk fruit as your desired sweetener, cut the
sugar in half.
