Chocolate Cherry Cookies

Ingredients

½ cup Magical Butter, softened

¾ cup Sugar

1 Large Egg

1 teaspoon Vanilla Extract

¼ teaspoon Almond Extract

Small amount of planted-based pink gel food coloring

1½ cups All Purpose Flour

½ teaspoon Baking Soda

¼ teaspoon Salt

¾ cup drained & finely chopped Maraschino Cherries (plus extra for garnish)

¾ cup chopped Chocolate or Chocolate Chips (I used dark chocolate - chopped, plus extra for garnish)
Directions
Preheat the oven to 350º Fahrenheit.
In a medium mixing bowl beat the Magical Butter and sugar with an electric mixer until combined. Add in the egg and extracts, mix well.
Add in a small amount of pink gel food coloring and mix. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to wet ingredients, mixing by hand with a silicone spatula.
Add in the finely chopped maraschino cherries and chocolate chips, mix with silicone spatula until combined; batter will be thick.
By hand, drop 2” dough balls onto a silicone lined baking sheet. Press additional cherries and chocolate chips into the outside of the dough balls to give cookies a MAGICAL look.
Bake for 14-16 minutes - DO NOT over bake or the cookies will lose their pink color and turn brown.
Allow the cookies to cool to the touch on the baking sheet then move them to a cooling rack. Enjoy!
