Mint Chocolate Chip Cookies
Preheat the oven to 375°F.
In a large bowl, cream together the sugars and butters until smooth and fluffy.
Add in the mint and the eggs one at a time and mix to combine.
In a separate bowl mix together the flour, salt, and baking soda.
Slowly add the dry mixture to the wet mixture and mix until well combined.
Add in the mint extract and the food coloring until you get a nice rich green color.
Fold in the chocolate chips.
Use a cookie scoop or form them into 1 tablespoon sized balls by hand and place onto a baking sheet lined with parchment.
Bake for 8-10 minutes or until golden brown around the edges.
Transfer to a cooling rack and enjoy!
