Homemade Luscious Lemon Bars

Ingredients

2 Cups Flour

1/2 Cup Packed Brown Sugar

1 teaspoon Salt

1 teaspoon (fresh) Lemon Zest

1/2 Cup Magical Canola Oil, cold

3 Large Egg Yokes

3 tablespoons Granulated Sugar

3 tablespoons Fresh Squeezed Lemon Juice

1 tablespoon Magical Canola Oil

2 teaspoon Lemon Zest

2 teaspoon Orange Zest

Directions
Preheat oven to 350°.
Line 9x9-inch pan with parchment paper. Set aside.
Combine crust ingredients: flour, brown sugar, salt, lemon zest, and cold canola oil until well combined. Press into the bottom of the prepared pan. Bake until light brown, about 20 minutes.
In a medium bowl, whisk egg yolks, sugar, lemon juice, canola oil, lemon and orange zest. Pour over baked crust. Place back into oven for 12 to 15 minutes or until set.
Cool completely, using a sharp knife cut into squares or rectangles, dust with confectionary sugar if desired. Cut into 40 bars when completely cooled.

This was the first "hit" recipe I made with coconut oil that was wildly popular with friends and family.
Infused butter could be added here, but I used canola oil for a healthier version. Be sure to grate fresh lemon and orange for that great zest flavor.
