Sugar Free Coconut Blondies
In a large bowl mix the magical coconut oil or butter, vanilla extract, eggs, and coconut cream.
Add in the dry ingredients ...coconut flour, shredded coconut, baking powder and sweetener.
You can either bake in a baking pan 7x7, or I use a mini cupcake pan, its equivalent to a tablespoon each.
Sprinkle with shredded coconut on top.
Bake at 345°F for 13 minutes for minis or 345°F for 20 mins for the 7x7.
Bake until edges are golden brown, let cool and enjoy!
