In a medium size pot on high heat, mix the coconut milk, pineapple juice, honey, vanilla paste, and infused coconut oil and bring it to a simmer.
Add the agar agar and cook it, whisking constantly for 1 minute or 2.
Let it cool down off the heat for a couple of minutes.
Place about 1/8 teaspoon of pineapple dices in each cavity of the molds.
Fill the cavities all the way up with the Pina Colada mix.
Let it set for 10 minutes, then close it with the lid and place in the fridge for a couple hours.
Mix the sugar, citric acid and shredded coconut into a small bowl.
Pop the gummies out (when set) and coat them in the coconut sugar mixture.
Serve and enjoy!
