Directions
Dough
In a stand mixer or large bowl mix the warm water, yeast, and sugar together. Cover and let sit for 5 minutes.
Next add in the Magical Olive Oil, salt, garlic powder, and half of the flour. Beat for 15 seconds with a dough hook, then add the remaining flour and beat for another 2 minutes. If using a bowl, mix with a non-stick spatula until it forms a sticky ball.
With lightly floured hands turn the dough onto a lightly floured surface and knead for 3-4 minutes. Poke the dough with your finger – if it slowly bounces back, your dough is ready to rise. If not, keep kneading.
Lightly grease a large bowl with more Magical Olive Oil or nonstick spray, then place the dough in the bowl making sure to coat all sides in the oil. Cover the bowl and allow the dough to rise at room temperature for 1-2 hours or until it doubles in size.
When the dough is ready, punch it down to release the air. Again using floured hands on a lightly floured work surface, shape the dough into about a 16 inch log. Using a very sharp knife, pizza cutter, or bench scraper, slice into 16 1-inch strips. These will become the individual knots.
Roll each strip into about 8 inch ropes, and tie each into knots. Arrange the knots on parchment lined baking sheets, then lightly cover and let rise again for 30-45 minutes.
Towards the end of the rise time above, preheat your oven to 400°F and start making your Italian Herb Butter.
After the final rise, brush the garlic knots with the butter mixture and place into the oven to bake for 20-23 minutes, or until the tops are golden brown.
Remove from the oven and brush with the remaining Italian Herb Butter mixture. Garnish with fresh parmesan and parsley.
Serve plain or with more Italian Herb Butter or Marinara Sauce
