No-Bake Carrot Cake Energy Balls
Carrot Cake Energy balls
Begin by adding your carrots to a food processor and blending until finely graded.
Then add dates, walnuts, oat flour, coconut shreds and spices and blend for 2-3 minutes, slowly drizzling in oil first and then maple syrup until it is all well incorporated.
Mixture should now be thick enough to roll in your hands. Roll dough into 1 inch balls and top with coconut shreds. (You can also roll them in coconut shreds)
Refrigerate for an hour, enjoy!
