Vegan Pancakes with Strawberry Compote

1 pound of Strawberries
1 cup Rasberries
2 tablespoons Organic Sugar
3 tablespoons Lemon Juice

1 tablespoon Magical Oil
1 ¼ cups all-purpose Flour
2 tablespoons White Sugar
2 teaspoons Baking Powder
½ teaspoon Salt
1 ¼ cups Water
Directions

In a bowl, sift together flour, sugar, baking powder and salt.
In a separate bowl, mix water with Magical Oil.
Make a well in the dry ingredients and pour in the wet ingredients. Stir until slightly lumpy.
Scoop large spoonfuls of batter onto a medium hot pan and cook until brown, usually about 3 minutes. Flip and repeat for 2 minutes.
Serve immediately or freeze for later. Enjoy!

Select one hour oil setting and run for 20 minutes.
