Heirloom Tomato Toast

Ingredients
Toasts
- 5 Slices Artisan Sourdough Bread (¾ inch thick)
- 3-4 Medium Heirloom Tomatoes
- ½ - 1 cup Smoky Bacon Fat Mayo (Recipe Below)
- 1½ cups Fresh Hemp Leaves
- 1 tablespoon Sea Salt Flakes
- 1 teaspoon Fresh Cracked Pepper
- 2 teaspoon Fresh Green Coriander Seeds
Smokey Bacon Fat Mayo
- ½ cup of Infused Applewood Smoked Bacon Fat (at room temp, recipe below)
- 1 tablespoon Chipotle Adobo (contents of the can pureed smooth)
- 1½ cups of Mayonnaise (Dukes mayonnaise if you can find it)
- 6 drops Sriracha
- ½ cup Bacon Bits (very small and crispy)
Magical Bacon Fat
- 14-28g Decarbed Botanicals
- 2 Cups Applewood Bacon Fat
Directions
Magical Bacon Fat
Add your botanicals and bacon fat to the Magical Butter Machine.
Set your temperature to 160°F and select the 2 HOUR cycle.
Once complete strain your infusion and store.
Smokey Bacon Fat Mayo
Put all the ingredients in the bowl of a food processor and mix well.
Add ¼ cup of crispy bacon bits to the mayo. Mix again, place the mayo into an airtight container, refrigerate.
Toast Assembly
Toast the bread slices to your liking. Slice the heirloom tomatoes as thick as you'd like them. Slather each piece of the toasted sourdough bread with as much smoky bacon fat mayo as you'd like, then sprinkle a nice amount of hemp greens on each toast.
Top the greens with three or four various sized tomato slices on each toast. Season each toast with salt and pepper and garnish each with a sprinkle of fresh green coriander seeds.
